Mexico Honey
This strictly high-grown lot of beans comes from farmers in Chiapas, Mexico working with Cofincaf. Cofincaf operates across Chilon, Sitalá, Simojovel, Sabanilla, Yajalón, Ocosingo, and others. With a network of over 2,000 solid and trusted suppliers, covering more than 3,000 producers, Cofincaf sources high-quality Mexico SHG coffees like this Honey lot. Honey process tones down the brightness and creates a soft, nutty, sweet, creamy mug of coffee.
A honey processed Mexican? That's worth a try, you don't see that too often. Very easy to drink. We enjoy the soft mouthfeel, almost buttery.
By far though, we enjoy it best when it is prepared as espresso (or even an aeropress or moka pot). In our shot of espresso we are tasting lime juice, butter, toffee, and a sweet finish.
Tasting notes: Brown Sugar, Citrus fruit, Almond
